Historically, Saratoga was a prime agricultural center known for its vast orchards of French prunes, apricots, and cherries, which earned it a central place in the "Valley of Heart's Delight."
Today, large-scale commercial agriculture has been replaced by residential development. However, agriculture remains a vital part of the city's heritage and current boutique economy through viticulture. The western foothills are home to several prestigious, historic wineries and vineyards—such as Mount Eden Vineyards, Savannah-Chanelle Vineyards, and Cooper-Garrod Estate Vineyards—producing high-quality Pinot Noir, Chardonnay, and Cabernet Sauvignon. Additionally, there is a small presence of equestrian boarding and training facilities in the hills.
